Shikibu Sushi

Brown rice Sushi is the specialty of the tiny hole in the wall restaurant, Shikibu, which faces the busy street of Washington Blvd. in Culver City, California. The establishment is run by Chef Thomas and his wife Sophia, a macrobiotics specialist. If you are lucky enough to steal one of the restaurant's 12 available seats (6 inside and 6 outside), you are in for quite a treat.

A macrobiotic diet consists of vegetables and whole grains, like brown rice, and promises a healthier lifestyle.

Sophia explained that her son had a condition called Atopy, causing rashes throughout his whole body. "I [thought] he needed to change his food style," said Sophia, "That's why I learned macrobiotics."

Seeing the gradual improvement of her son's health, Sophia decided that she would like to spread her newfound knowledge of macrobiotics with more people and introduced the idea of Brown Rice Sushi to her husband, Chef Thomas.

"So many people need to [create] a diet. So many people have health problems," said Sophia, "And that is why I recommend brown rice: it is very good for your body and changes it little by little."

A couple of the restaurant's specialty dishes to look out for include the Spicy Tuna Roll and the Crispy Rice. Both are made with brown rice and, at Shikibu, you get to "spray" the soy sauce on with the famous Pump Spray, created by Chef Thomas.

"This is the world premiere of the Pump Spray soy sauce," announced Chef Thomas.
